How to make really good buttercream icing: 1 tbsp vanilla, 454g icing sugar, 225g room temperature butter, 3 tbsp heavy cream, 1/2 tsp salt. Using a stand or electric mixer, (or by hand) whip butter and salt until fluffy and light in colour. Spoon in icing sugar a little at a time with the mixer on low to prevent mess. Add cream and vanilla. Beat until incorporated. Cake optional. Have fun.
